You can enjoy our famous "Charcoal-grilled Kuroge Wagyu beef loin with kelp," the transparent "Kuroge Wagyu tail soup" cooked for 18 hours, deep-fried skewers, and dragon's eye earthen pot rice. The Deep Connection Between Hatcho Miso and Nagoya Hatcho miso is a type of miso produced around Nagoya, Aichi Prefecture. Its origins date back to the Edo period. Farmers in the Nagoya area made this miso for home use by using a lot of soybeans and salt, and firmly pressing it into miso barrels. This unique method of production characterizes Hatcho miso. The relationship between Nagoya and Hatcho miso is profound. For a long time, Hatcho miso has been produced in villages on the outskirts of Nagoya. As a result, it has become an essential seasoning in the local cuisine of Aichi Prefecture, centered around Nagoya. Hatcho miso is commonly used as a sweet miso in dishes like dressings and miso stews, making it a staple in "Nagoya meshi" (Nagoya cuisine). We highly recommend the Nagoya Miso Katsu Set Meal, generously topped with Hatcho miso.
Local Gourmet: Ebi Furai (Fried Shrimp)
Aichi Prefecture is one of the leading producers of tiger prawns in Japan, making fried shrimp (ebi furai) a specialty of Nagoya. In 1990, the tiger prawns shrimp was designated as the "Fish of Aichi Prefecture," highlighting its regional significance. This connection to the local shrimp industry is one reason why fried shrimp is considered a Nagoya specialty. Another reason ties back to Nagoya Castle, originally built in 1612 by Tokugawa Ieyasu and rebuilt in 1959. The golden shachihoko (mythical carp with the head of a lion) atop the castle’s main tower is said to resemble a fried shrimp, contributing to its local fame. Nagoya's ebi furai varies by region, with unique preparations and flavors. Differences include the types of sauces used, the composition of the breading, and the size of the shrimp. These variations reflect the local culture and environment, allowing you to enjoy a range of ebi furai flavors throughout Nagoya.
